There are currently 80 packages that depend directly on media-libs/gstreamer. However, as it's usually a runtime-only dependency, its upgrade is unlikely to break any packages.
Gstreamer in Funtoo is now relatively old and should be updated to a more current version, which will support adding more advanced codecs, which are now leveraged by pulseaudio for high-resolution bluetooth audio.
